CRAFTING AND AGING

From some of the oldest vines in the region, an elegantly complex and robust classic.

Winemaking and aging:

  • Alcoholic fermentation at controlled temperature of 28ºC in contact with skins.
  • Second fermentation in underground vats.
  • Barrel aging (oxidative) in high quality semi-new French and American oak barrels during 26 months.
  • Bottle aging (reductive) for a minimum of 36 months prior to release. Each bottle is individually hand-stacked in our underground bottle cellar.

Tasting note

LOOK: Clean and bright. Deep ruby red color.

AROMA & PALATE: Pronounced ripe fruit notes on the nose.  Complex and balanced, with polished tannins and leather notes. Poised acidity that sustains a long finish with licorice notes.

Food pairing

Ideal for serving with all kinds of meat, particularly game. It is a very elegant wine that enhances stews and or fatty fish such as salmon and tuna, or chocolate-based desserts.
