- Manual harvest in small boxes.
- Maceration with skins prior to a gentle pressing. Slow alcoholic fermentation with native yeast strains at a low temperature.
- Several weeks of contact with its lees prior to bottling.
LOOK: Attractive, pale lemon color with green hints.
AROMA & PALATE: Very elegant nose, with jasmine and orange blossom hints followed by notes of sweet apple and dried herbs with a saline background. Rich and full of flavor and texture on the palate. Lively acidity surrounded by flower and citrus notes mixed with aromatic herbs. Balanced with a long finish.
Extremely versatile for pairing with Indian, Mexican and Thai cuisine – dishes such as Chicken Tikka Masala or Pad Thai, or a traditional pairing like seafood, clams or oysters.
