Variety

60% Tempranillo, 25% Graciano and 15% Maturana Tinta

The rainfall recorded during the cycle ensured a good load in the vineyards and suddicient water for ripening. A few days before the start of the harvest, there were several storms that required a lot of work in the vineyard and the grapes selection.

A single vineyard of more than 70 years old, in which we have planted the three varieties, including some white grape vines. it is a vineyard on a south-facing slope, with clay-limestone soil and a large amount of stones. the vines are bush-pruned and irrigated only by natural rainfall, and the different varieties we need are marked with care and dedication. during ripening, we carry out a selective clearing of bunches in order to bring the ripening of the three varieties as close as possible. when the harvesting date arrives, we select the best bunches in the vineyard, which are transported in small boxes and then selected again in the winery by expert hands.

Vinified in underground concrete tanks, the must was bled off at 6% of the totality. fermented at 28ºc after two days of cold maceration at 9ºc. the pumping over during alcoholic fermentation was continuous and programmed, thus achieving the desired extraction.

Once all the sugar was finished, it macerated with its skins for three weeks, controlling with exhaustive tastings and authentic dedication that the tannic and aromatic transfer was as we wished.
